Raspberry Razzle Jello Salad

Raspberry Razzle Jello salad is a fantastic jello salad recipe from my Aunt Mike (Michelle).  I make this for every family picnic and party (I even make it in a brain mold as a spooky Halloween dessert) and guests always ask for the recipe.  Tangy and refreshing, it is so popular at our events, it is usually one of the first dishes to go!  Super easy to prepare, but make certain you allow enough time for it to set properly.

Note: I have tried to make this with strawberries, but there is just something about the tangy sweet combination of raspberries and sour cream that adds the perfect amount of zip!

Raspberry Razzle Jello Salad

  • 6 oz. package of raspberry gelatin
  • 10 oz. of frozen raspberries
  • 16 oz. container of sour cream
  • 1 c. water

Combine all ingredients in a saucepan. Stir with a whisk to smooth lumps, and heat to boiling, stirring constantly.  When it boils, remove it from heat immediately and pour it into a dish or jello mold.  Allow to cool for about 20 minutes and then place in the refrigerator for at least four hours.  If cooling overnight, make certain to cover it with plastic wrap so you do not get that yucky jello “skin”.

Note: If you are looking for a delicious gelatin salad for the 4th of July or Labor Day picnics, this is it! Just dress it up with a layer of fresh blueberries and whipped cream on top and you have a festive dessert!
