Tender orange-juice steamed carrots, tossed in a honey-butter tarragon glaze then caramelized in the oven. Yum! Another plus? These glazed carrots are pretty to look at and the recipe is quick and easy to make, just 25 minutes from cutting board to table. What could be better than easy, pretty, and delicious!
Honey-Orange Tarragon Glazed Carrots
- 10-15 Full size carrots, scrubbed clean
- 1/2 c. Orange Juice
- 3 Tbsp. Unsalted Butter, softened
- 2 Tbsp. Honey
- 1 Tbsp. Brown Sugar
- 1/2 tsp. Salt
- 1 tsp. Fresh or Dried Tarragon
Preheat the oven to 350 degrees. If the carrots have thick skins, peel them, otherwise, just scrub the carrots clean. Chop the green end of the carrots off and cut the carrots into 2-3 inch coins.
Place in a microwave-safe dish, add about 1/2 cup of orange juice, cover, and microwave about five minutes. Remove from the microwave and set aside. In a separate bowl, mix the softened butter with the honey, brown sugar, salt, and tarragon. Toss the honey butter mixture into the carrots and blend together with the orange juice to cover. Place in the heated oven for 12-15 minutes. Serve immediately.
Note: When you put the carrots in the oven to bake, watch them carefully so they do not burn. Honey has a lower melting point, which is why I mix in a little brown sugar, which has a higher melting point. This allows the carrots to caramelize slower and more steady, but because they are sugar-coated, they can still burn easily, so keep an eye on them. You want the sauce to brown, not burn.
