Ice Cream, you scream, we all scream for…Grilled Honey Balsamic Strawberry Sundaes?  Who wants to spend a lot of time of time in the kitchen preparing dessert when it is so hot out?  Not me! Ice cream is a quick and easy dessert any time of year, but especially in the summertime.  This delicious dessert takes 20 minutes to make, including grill time, and turns a boring ice cream sundae into a healthy gourmet delight.  Fresh juicy strawberries are paired with honey and balsamic vinegar then   tossed into a foil packet on the grill for a few minutes…the grill caramelizes it all into a decadent sweet and tangy treat that is pretty to look at and even better to eat!  This cool summer dessert is so easy, it can easily be customized for a crowd or for a quick weeknight sweet treat for two!

Grilled Honey Balsamic Strawberry Sundaes

  • 1 Pint Fresh Strawberries
  • 2 Tbsp Honey
  • 2 Tbsp. Aged Balsamic Vinegar
  • 1 Tbsp Butter
  • Vanilla Ice Cream (Or use frozen yogurt to be even healthier)

Tools:

Wash, dry, and hull the fresh strawberries. Slice the strawberries into a bowl, about 1/2 inch thick.  Add the honey and balsamic vinegar.  Toss together to mix. Place the strawberry mixture in the middle of a large piece of aluminum foil. Add a 1 Tbsp. pat of butter, then fold the aluminum foil over to make a seal packet. Place on the grill for about 15 minutes, until the strawberries have become macerated and soft, and the liquid is slightly thickened. Remove from the grill and set aside to cool for about 20 min. Add 2 scoops of vanilla ice cream to each serving bowl. Drizzle some of the grilled strawberries and sauce over the ice cream. You can use the sauce warm, or store in a large canning jar or sealed container in the refrigerator until use.

I love strawberry syrup, and this looks like such a good version – way fancier than the one I make but no harder. Yum!
