I love marshmallow Peeps for Easter, but with each bite, they get sweeter and sweeter until my teeth fall out of my head. (Just kidding, I still have all my teeth.) I really do love Peeps, but how many Peeps can one person eat at a time?! This fun and colorful Easter Peeps Colada Cocktail uses our favorite colorful little Easter chicks in a fun and unique way.
Don’t worry, no chickies were hurt in the making of this cocktail, they don’t go inside the drink, they are just a garnish on top…so you can bite their head off later (although technically these are bunnies, not chicks…but I digress.) Refreshing delectable, this Easter Peeps Colada cocktail is a fun way to celebrate Easter at Easter brunch or dinner!
Easter Peeps Colada Cocktail
Before you start this cocktail recipe, I have a confession. I like coconut in my pina colada cocktail but most colada recipes have so much coconut it overwhelms the drink. This recipe balances the coconut and pineapple with a nice dose of key lime- – sweet, tangy, refreshing. Also, instead of using ice to make a frozen cocktail, I use sherbet to add the Peeps color and a little extra flavor to the drink.
- 4 oz. Light Rum
- 4 oz. Coconut Cream
- 6 oz. Pineapple Juice
- 2 oz. Key Lime Juice
- 2 oz. Fresh Pineapple
- 4 oz. Pineapple or Lime Sherbet
- Peeps Candy
(Makes two cocktails)

Cut the fresh pineapple into small chunks. You can also use canned crushed pineapple if you do not have fresh. Add the rum, coconut cream, pineapple juice, pineapple, and sherbet together in a blender and blend until smooth.
Fill the ice cream soda glasses 1/2 full with crushed ice, then divide the colada mixture between the two glasses. Garnish the top of each glass with a Peep on a cocktail pick. You can also top the colada with whipped cream and a cherry, but I preferred my colada whipped cream free!
