Quick One Pot Creamed Spinach

This recipe for Quick One Pot Creamed Spinach is about as easy as you can get for a quick and easy weeknight vegetable.  Similar to my Four Cheese Creamed Spinach, this one is even easier and just as delicious–you make the entire dish in one pot and serve in 25 minutes.  Even my finicky teenager loves this recipe and yours will too! Quick One Pot Creamed Spinach

  • 1 c. Heavy Cream
  • 5 c. Fresh Spinach
  • 1 tsp. Salt
  • 1 Tbsp Butter
  • 1/2 c. Shredded Cheddar Cheese
  • 1/2 c. Shredded Parmesan Cheese

Heat the cream in a large saucepan on medium high heat.  Add the spinach, pinching the ends off.  Add salt and stir together, then cover with lid.  Stir frequently so the cream does not burn, until the spinach wilts into the cream.  Add the cheddar and Parmesan cheese and stir until melted.  Simmer 4-5 minutes until the sauce thickens, then serve immediately.
