Tropical Yogurt Parfait

It’s funny.  As a mom, I thought I would be running around more when my son was younger, but now that he is a older, I am always on the go.  I am certainly not complaining, I love this part of motherhood and it will be over before I know it when he goes off to college, but every now and then I need a break.  Do you find yourself running more as your kids get older too? With this Tropical Yogurt Parfait, made with Sunsweet’s Philippine Tropicals dried fruit, I can have a five minute tropical time out in paradise!

Tropical Yogurt Parfait

  • 1 Container Vanilla Greek Yogurt
  • 1 Tbsp. Sunsweet Thai Coconut Chips, crumbled
  • 2-3 Sunsweet Philippine Green Mango slices, chopped
  • 1 Sunsweet Philippine Mango slices, chopped
  • 1-2 Sunsweet Philippine Pineapple pieces, chopped

Tropical Yogurt Parfait 2Scoop 3-4 tablespoons of the yogurt into a parfait glass.  Sprinkle with half the coconut, green mango, mango, and pineapple.  Spoon the remaining yogurt into the glass and top with the rest of the dried fruit.  Grab a spoon, close your eyes, open the window, and feel the tropical breeze on your face as you snack.

Note: If you mix the Thai Coconut chips together with honey yogurt, it tastes like coconut cream pie!
