Goblin Goo Halloween Cocktail

Goblin Goo is one of my favorite Halloween cocktails because it is so quick to make and delicious!  I call it Goblin Goo because the lime sherbet creates a frothy-green surface on the top of the glass for spooky fun!  Perfect for a Halloween party or get together.

Goblin Goo Halloween Cocktail

 

  • 2 scoops Lime Sherbet or Rainbow Sherbet
  • 2 oz. Pineapple Flavored Malibu Rum
  • 5 oz. Cherry Lemon-Lime Soda
  • 2-3 Maraschino cherries, with the stems removed

Scoop the lime sherbet into a tall cocktail glass such as a Tom Collins glass.  Add the pineapple rum and lemon-lime soda.  Give the glass a quick stir with a cocktail spoon to create the cloudy bottom, but don’t over stir or you will lose the bubbles.  The lemon-lime soda mixed with the lime sherbet creates a foam on the top of the glass.   To add more dimension to the drink, use rainbow sherbet as I did.

Float the cherries in the “goo” and serve immediately, or put the cherries in the bottom of the glass before adding the sherbet to make “goblin eyes”.

Note: You can make this non-alcoholic for the kids by substituting the pineapple rum for pineapple juice.  Want to make it even spookier?  Use a lighted green glow stick as a swizzle stick!  Try this Poisoned Apple cocktail and Candy Corn Martini for more Halloween-inspired cocktails!
