Cauliflower is in season right now, so it’s a perfect time to dust off your taste buds and sink your teeth into this Cheesy Dijon cauliflower, made with a zesty Dijon sauce. My Mom made this all the time when I was growing up, and I still love it today…you will too!
Cheesy Dijon Cauliflower
- 1 Head of Cauliflower, broken into pieces
- 2/3 c. Mayonnaise
- 3 Tbsp. Dijon Mustard
- 1/2 c. Shredded Cheddar Cheese
Wash and dry the cauliflower pieces and place in a medium (microwave-proof) baking dish. Add a small amount of water and steam the cauliflower for about 10 minutes. Drain the water from the cauliflower and set aside. Mix the mayonnaise, Dijon mustard, and cheese together in a small bowl. Spoon the dijon-cheese mixture over the top of the cauliflower, spreading to evenly coat all the pieces. Heat in the microwave about three minutes, and serve immediately.
