When thinking about the big game, most people have plenty of snack and entree ideas, but what about dessert?  Do you need a delicious dessert to keep your football fans happy? Everyone loves brownies, and these brownie ice cream sandwiches fulfill the three requirements for the perfect game day dessert: easy to make, easy to eat, and rich in chocolate!  The brownie recipe comes from my husband’s side of the family (via his cousin Teresa), and this fudgy brownie is the perfect base for the luscious ice cream in the middle.

Brownie Ice Cream Sandwiches

  • 3/4 c. Unsweetened Cocoa
  • 1/2 tsp. Baking soda
  • 2/3 c. Vegetable Oil
  • 1/2 c. Boiling Water
  • 2 c. Sugar
  • 2 Eggs
  • 1 1/3 c. Flour
  • 1 tsp Vanilla
  • 1/4 tsp. Salt
  • 1 Quart of Ice Cream

Preheat oven to 350 degrees.  Mix together the cocoa and baking soda, then blend in the 1/3 c. of the vegetable oil.  Add boiling water and still until mixture thickens.  Stir in eggs, sugar, vanilla, and the remainder of the the vegetable oil until smooth.  Add flour and salt, and blend completely.  Pour into a greased 13 x 9″ baking pan and bake 35-40 minutes.  When the brownies are done baking, remove and cool.   When the brownies are completely cool, remove ice cream from the freezer and allow to thaw about 15 minutes.  Carefully cut half the brownies out of the pan and set aside.  Scoop ice cream over the remaining brownies, using a knife to smooth the ice cream over the entire brownie in an even layer.  Add the cut brownies to the top, cover with foil, and place in the freezer for 3-4 hours.  Remove the brownies from the freezer and cut the brownies into bite-size pieces and serve immediately.
