They say a way to a mans heart is through his stomach, and I’ve found this to be especially true with my husband. I like to joke that I won my husband’s heart with my cooking!  Because I know how happy he gets when I make him something special, I try to make his favorite dishes every chance I get.  Unfortunately, as a full-time business woman, this is not always an easy task on busy week nights.  When I am short on time, I rely on quick and easy side dishes such as Alexia Veggie Sides to go along with my homemade entrées.   This recipe for Alexia Veggie Sides + Herb Roasted Chicken with a tangy Cider Gravy is pure love for my family and yours!

I sampled the Cauliflower Risotto and the Mashed Butternut Squash.  Oh my goodness!  The cauliflower risotto was creamy and flavorful, and I barely noticed it was cauliflower, not rice.  The Mashed Butternut Squash with a hint of butter and brown sugar was sweet and savory and paired perfectly with my Herb Roasted Chicken!

Herb Roasted Chicken & Tangy Cider Gravy

I created my chicken recipe with the Cauliflower Risotto and Mashed Butternut Squash in mind as side dishes, and they paired deliciously!  The Herb Roasted Chicken takes 90 minutes from oven to table, and the side dishes take ten minutes each to prepare…and it took my husband all of 15 minutes to devour!

  • 3-4 Chicken Bone-In Chicken Breasts
  • 1/2 Medium Onion, Sliced
  • 2-3 Leaves Fresh Basil, snipped thin
  • 1 tsp. Fresh Rosemary, snipped
  • 1-2 Cloves Garlic, minced
  • 1 Tbsp. Olive Oil
  • 3 Tbsp. Apple Cider Vinegar
  • 1/2 c. Chicken Stock
  • 2 Tbsp. Butter
  • 2 Tbsp. Superfine Flour
  • 1/2 c. Chicken Stock
  • 1/4 c. Apple Cider
  • Salt and Pepper to taste

Preheat the oven to 350 degrees.  Wash and pat dry the chicken breasts.  If you want to go lower calorie, you can use boneless/skinless chicken breasts but the skin helps keep the chicken moist and helps to make the gravy extra yummy.  Spread the onions over the bottom of a baking pan and add the chicken breasts.  In a separate bowl, blend together the basil, rosemary, olive oil, apple cider vinegar, and chicken stock.  Brush the mixture over the chicken, then pour the rest in the bottom and place in the heated oven.  Bake about 60-75 minutes.

Place the butter in a saucepan and melt over medium heat.  Add the flour to make a roux and blend together until mixed.  Add the chicken stock and apple cider and heat to boiling, stirring constantly.  When the chicken is done roasting, add whatever juices are left at the bottom of the baking pan, skimming off any extra chicken fat.  Stir the gravy until thick, then remove from heat and serve with Alexia Veggie Sides.
